A little bit about Tommy: Born and raised on the Honey Island Swamp in Slidell, Tommy grew up catching and eating alligator, wild boar, catfish, shrimp, and crawfish- he always found his way into the kitchen. He spent a decade of his culinary career working with the Brennan family, namely at Commander’s Palace. He also contributed to the openings of both Bacobar and Trenassse, and was most recently the executive chef at Cellar Door. His food is inspired with flavors from personal travel experiences combined with those of his childhood and Louisiana roots.
